Baked Egg with Toasted Brioche Soldiers and Truffle Oil

Ingredients

  • 1 egg
  • 1 thick slice of brioche
  • Drizzle of truffle oil
  • Black pepper to taste

Preparation method

  1. Break egg into a ramekin, season with black pepper and bake.
  2. Toast brioche until golden on all sides.
  3. When egg white is firm to touch remove from the oven and rest.
  4. Cut brioche into chunky soldiers.
  5. Drizzle egg with truffle oil, and serve in the ramekin with soldiers on the side.

Can also be served with grilled pancetta.
