Bruschetta with Chorizo and Marinated Vegetables

Ingredients

  • 100g cubed chorizo
  • 25g diced Pepperdew peppers (seeds removed)
  • 15g diced sun-dried tomatoes
  • 1 thick slice ciabatta bread
  • Drizzle of garlic oil
  • Balsamic reduction to serve
  • Finely chopped parsley to serve

Preparation method

  1. Roast chorizo until caramelised around the edges. Leave to rest.
  2. Mix peppers, sun-dried tomatoes and chorizo together. Season.
  3. Toast ciabatta and brush with garlic oil.
  4. Top ciabatta with chorizo mixture, and sprinkle with parsley.
  5. Drizzle balsamic around plate to serve.
