‘Grown up’ Prawn Cocktail

Ingredients

  • 6 large raw tiger prawns
  • 1 large leaf of cos lettuce
  • 1 celery stick
  • 2 tomatoes
  • 1/2 shot vodka
  • Drizzle of Worcester sauce
  • 1tsp celery salt
  • Cracked black pepper

Preparation method

  1. Peel, deseed and finely dice tomatoes.
  2. Peel and finely dice half the celery stick.
  3. Mix together tomatoes and celery with vodka and black pepper. Chill.
  4. Roll prawns in celery salt and dry fry until cooked. Set aside.
  5. Tear up cos lettuce into large pieces and stand around the edge of a large martini glass.
  6. Stand other half of celery stick against one piece of lettuce.
  7. Add tomato mixture to the bottom of the bowl and top with Worcester sauce.
  8. Finish with prawns and serve.
