Pepperdew Peppers with Goats Cheese Mousse

Ingredients

  • 5 pepperdew peppers, seeds removed
  • 40g Goats cheese
  • 1floz whipped double cream
  • ½ whipped egg white
  • Salt and pepper to taste
  • Mixed leaves to serve
  • Vinaigrette to serve

Preparation method

  1. Fold goat’s cheese, whipped cream and egg white together. Season to taste. Leave for a minimum of one hour to set.
  2. Remove mousse into a piping bag with a plain nozzle.
  3. Pipe into the centre of peppers. Refrigerate.
  4. Place dressed mixed leaves into the centre of a wooden board, and top with peppers.
