Roasted Pumpkin and Chorizo Salad


  • 75g cubed chorizo
  • 30g cubed pumpkin
  • 10g diced red pepper
  • 10g diced yellow pepper
  • 100g mixed leaves

Preparation method

  1. Roast chorizo until caramelised around edges.
  2. In a separate tray roast pumpkin and peppers.
  3. When cooled mix chorizo and pumpkin together.
  4. Place mixed leaves onto plate and top with chorizo and peppers.

Add roasted salmon or chicken for a more substantial meal.
