Tomato and Mozzarella Tartlet with Basil Pesto

Ingredients

  • 1 tomato (skinned)
  • 25g buffalo mozzarella
  • 5” puff pastry disc
  • Drizzle of basil pesto
  • Salt and black pepper to season

Preparation method

  1. Slice tomato and layer in the centre of puff pastry disc. Leaving ½ cm edge.
  2. Tear mozzarella and place on tomatoes.
  3. Drizzle over pesto, and season with salt and pepper.
  4. Baked until golden brown, and edge is raised around topping.
  5. Serve immediately.

Use 9” disc for a main course portion.
