Warm Bacon, Black Pudding and Poached Egg Salad

Ingredients

  • 2 rashers back bacon
  • 50g black pudding
  • 1 large egg
  • 150g mixed leaves
  • Drizzle of French dressing
  • Salt and pepper

Preparation method

  1. Slice bacon rashers and fry in hot oil with cubed black pudding, remove to kitchen paper and rest.
  2. Soft poach egg, remove and rest.
  3. Mix leaves with vinaigrette and seasoning.
  4. Assemble salad with poached egg on top.

Double quantity for main course portion.
